Meet Your Guide

Hi, I’m Oliver, founder of Oliver’s Custom Coffee. I’ve been working in specialty coffee for more than three decades, and over the years I’ve been able to discover the most amazing coffees and work with the world’s greatest farmers.

Now, here’s the best part: getting to share these rare gems with you. These are the best of the best, featuring the rarest varietals, experimental lots, and custom fermentations.

Thanks for joining me on this journey – it’s nothing but awesome from here on out.

Oliver is the Co-Owner, President, and Green Coffee Buyer for Olympia Coffee Roasting Co. He has worked in the specialty coffee industry for over three decades. He has held positions at major global brands, regional chains, and small start-ups. He has worked in all aspects of the industry including as a barista, manager, roaster, production worker, and green coffee buyer.

Oliver’s academic studies in food science inspired him to approach coffee roasting uniquely. Looking at chemical reactions during the roasting process, Oliver invented a new process of roasting coffee called “Caramelization Roast.” Oliver is also considered a “super taster” with one of the few perfect scores on the Sensory Skills Analysis Test for his Q Grader Certification. He is also a Certified Q Processor Expert with Coffee Quality Institute.

He is passionate about improving lives around the world through quality coffee, ethical trade, and global transparency. In his spare time, he loves spending time with his wife and daughter and is passionate about food, cooking, travel, and music.

About Our Coffee

  • Roast Levels

One size doesn’t necessarily fit all. By offering every one of our coffee in a lighter or darker roast, you have the chance to explore the unique flavors each approach imparts. And, you will learn more about coffee and your preferences along the way. You can even try an individual coffee roasted lighter and darker, to compare the effect of roast. Oliver’s offers every coffee we sell in a choice of roasts, and you’ll notice we offer a unique description of the flavors of each to help you in your decision.

  • Processing

Coffee processing refers to the different ways coffee cherries are processed after harvesting. The processing method used has a significant impact on the flavor of the resulting coffee beans. Processing is an important step in affecting a coffee’s flavor and character. We’re determined to offer coffees with unique methods of processing whenever possible.

  • Origins

At Oliver’s Custom Coffee, we’re determined to explore underserved and under-appreciated origins, to find unique offerings to bring to you. What we’re looking for are remarkable flavors, wherever we can find them. This might mean finding unique gems at familiar origins, or it might mean doing the work to get excellent results at origins to which you’ve never really paid attention. It is all in the service of excellent and truly unique coffees.
